I have been making bread!

I have been making the basic recipe from this cookbook. It is wonderful and so easy. Basically you throw some ingredients together and then you pull out dough whenever you feel like it to make bread. It makes 4 loaves.

Eggplant and Rice

I found this recipe on I have made it many times. To make it oil free just substitute veggie broth or water instead of oil.

1 tablespoon virgin olive oil
1 teaspoon virgin olive oil
3/4 cup onion, finely chopped
2 garlic cloves, minced
1 small eggplant, peeled and cut into 1/2 inch cubes
1/2 tomato, finely chopped
1 bay leaf
1/2 teaspoon thyme or 2 teaspoons fresh thyme, minced
1 cup long grain rice
2 cups water or 2 cups Vegetable stock
parsley, chopped fine for garnish

Heat oil in a heavy saucepan over medium high heat.
Sauté onion and garlic 3-4 minutes or until onion is softened.
Stir in next 4 ingredients (eggplant, tomato, bay leaf & thyme) and mix thoroughly.
Cover saucepan and simmer 3 minutes.
Stir in remaining ingredients (rice & chicken stock) and salt and pepper to taste and return to a boil.
Immediately reduce heat to low.
Cover and simmer 20-25 minutes or until rice is tender and liquid is absorbed.

Overnight Oatmeal

I love this for breakfast!!!!

The recipe was at the whole foods site...I adapted it a bit...

2 cups rolled oats (not instant or quick cooking)
2 cups almondmilk
1 teaspoon lemon zest
1/2 teaspoon vanilla extract

Combine oats, milk, zest and vanilla in a bowl, cover and refrigerate overnight.

lentil loaf--was looking at recipes in Prevent and Reverse Heart Disease and was LAZY and kinda made up my own twist since i didn't feel like measuring! LOL

used a package of lentils from trader joe's and a package of frozen brown rice that you microwave (not sure of brand got at Publix probably 3 cups) or use leftover brown rice. mush lentils and rice in bowl, sauted half of a large onion in veggie broth a few minutes and then added a big handful of fresh spinach- chopped. drained pan and added to lentil and rice mixture. added half a carton of pome chopped tomato. Added some Italian Seasoning. Put in 2 loaf pans and added ketchup to top and cooked at 350 for 40 minutes.
heat leftovers with extra kechup.
